Colorful Boba Pearl from Scratch! Failsafe Revised Recipe!

Colorful and Fruity Boba Pearls could be the next Unicorn Boba Pearl Beverage!
Previously I did a video on how to make tapioca boba pearls at home and some have been telling me that their dough end up becoming too stick and could not work on the dough to roll them. So just recently I’ve got some extra time and thought that I should improve the recipe to make it failsafe, so anyone can make it at home with ease. Perhaps adding some cheese foam to it would be great too! (Cheese Tea Recipe here)
And this time, even better, I am sharing the recipe for boba pearls that are made with fresh fruits!
Ingredients for Boba Pearls
  • 1 cup+/- Fresh Fruits of your choice
  • 1 cup of Tapioca Flour
  • 1/2 cup of Sugar
  • 1/2 cup of Hot Water
  • 1/2 cup of Tapioca Flour
Procedure –Making the dough
  1. Remove the skin of the fruit if any.
  2. Chop fruits into tiny pieces or blend them into puree.
  3. Into a pot, add chopped fruits, 1 cup of tapioca flour, sugar and hot water.
  4. Cook them over lowest heat. As you cook them, stir consistently to mix and prevent bottom from burning.
  5. Cook until it comes together and form a stick dough.
  6. Turn of the heat.
  7. Add another 1/2 cup of tapioca flour and fold the flour into the dough.
  8. Once the flour are folded in, generously flour a clean working surface as well as your hands. Transfer the dough onto the floured surface.
  9. Roll the dough into an elongated shape and cut them into several smaller pieces.
  10. Then roll the smaller dough into a smaller roll about the diameter of a chopstick.
  11. Then cut the at about 1 cm in length and roll them into round shape.
  12. Transfer the round uncooked boba pearls into a container and flour them again to prevent them from sticking to one another.
Procedure – Cooking the Boba Pearls
  1. With a pot, add enough of water to boil the uncooked boba pearls.
  2. Only add the uncooked boba pearls when the water are at boiling point.
  3. Simmer for 5 minutes.
  4. After that, transfer the cooked boba pearls into ice water to stop the cooking and set aside.
Braising the Boba Pearls – Ingredients
  • 2 cups+/- Fresh Fruits of your choice (chopped or puree)
  • 3/4 cups of Sugar (reduce or add sugar, if preferred)
  • 1 cups of Hot Water
Procedure
  1. Into a pot, add chopped fresh fruits, sugar and hot water.
  2. Bring it to a boil, add boba pearls in.
  3. Simmer for 10 minutes.
  4. You should achieve a thick gooey jam like consistency.
Serving Suggestion
  • Sweet Potatoes Boba Pearls with Coconut Milk – Similar to bubur cha cha.
  • Red Dragon Fruit Boba Pearl with Fresh Milk
  • Kiwi Boba Pearl with Oolong Tea
The possibility to mix and match is limitless. Think of traditional dessert, it might be able to turn it into a boba beverage!

How to Make Tapioca Pearls From Scratch.









Step 1: Tapioca Pearls, Boba, Taro, Sago. You Name It, Now You Can Make It

Perhaps one of the easiest recipes ever! All it calls for is tapioca flour and boiling water. Make this in whatever quantity you like, just keep the ratio 3:1.
The amount of water you cook the pearls in doesn't really matter, you just don't want it to dry up while cooking the balls. The sugar isn't crucial either, this is one of the easily adaptable factors that I will talk more about at the end.
For this instructable I used-

9 tsp tapioca flour
3 tsp BOILING water
3 cups water in a saucepan w/
1 cup brown sugar

While this recipe is incredibly easy, it does call for one crucial step that you cannot get wrong!

1- Add your water to a saucepan and bring to the boil.
2- Place your tapioca flour in a bowl, I find stainless steel or glass easiest to work with.
3- This is the most important part. Have your measuring implement ready to go. Fill it with the water on the boil and immediately add it to the flour.
4- Quickly mix it together with a spoon until it starts to form a ball. At this stage continue mixing and kneading with your hands until it reaches a play-doh like consistency.
5- Add the brown sugar to the boiling water, stirring until it is dissolved. Set about a quarter of this aside in a separate bowl and allow to cool in the fridge. This will be used for our pearls once cooked.

The reason the water needs to be boiling is because it will not form the right consistency with just hot or cold water. Instead it will turn into a sloppy mess that won't hold it's shape.
Another important thing to remember is that tapioca flour is gluten free, so there is no way you will over work the dough - it is actually quite fun to play with and completely non toxic, so once it is cool feel free to get the kids involved.

This is the hardest part of tapioca pearls, but I have found a way to make it slightly easier.

1- Form your dough into sausages about 5mm thick and cut into batons roughly 8mm long.
2- Roll the batons until they form a pea sized ball.
3- Keep going until you use up all of your mix.
4- Add the balls to the boiling water and sugar. They will sink at first then rise and puff up.

Alternatively you can roll your dough flat and cut it into cubes for a different mouth feel - similar to the jellies you can buy at bubble tea stores.
If your dough starts to feel dry or "crusty" on the outside simply knead it until it feels smooth and slightly sticky to the touch. If the dough feels too sticky to work with sprinkle a little tapioca flour onto your work bench.

This step will either go really fast or take forever. The time comes down to two things - the size of your balls and your preference on texture.

1- Check the pearls at regular intervals, every 5 minutes is good.
2- Continually stir the pearls, especially when cooking in sugar as it will thicken and you will lose water content.
3- Once they are cooked to your preference spoon them into your reserved sugar syrup, place them in the fridge and allow to cool.

My pearls were ready after 15 minutes, they had no resistance when I bit into it and felt sticky and slimy. It is important that they feel slightly over cooked to how you would like them. This is because the pearls will firm up the cooler they get. Generally your pearls will be done when you see air bubbles throughout the whole ball.
The reason we reserved some of the sugar syrup at the start is because the tapioca will make the mixture we cooked in go slimy and it just doesn't work as well. The reserved mixture can also be used to sweeten your tea.

Step 5: Brew Your Tea

How you do this is totally up to you! I simply added two black tea bags to a cup of boiling water, let it steep for 10 minutes then left it in the fridge to cool with my pearls.
Make absolutely any tea you like to whatever specifications you desire, just don't add any milk or creamer.

Step 6: This Is Where the Magic Happens!

It's finally here! You're almost ready to drink your own, well deserved bubble tea!

1- Pour your cold tea into a large glass.
2- Add desired amount of ice.
3- Spoon in those pearls and as much sugar syrup as you would like. This is also a good time to add in any flavorings - fruit nectars, cordials, syrups etc.
4- Shake your milk or creamer to create a little froth and pour it over your tea.
5- Stick in your oversized straw, stir and marvel at how easy it is to create your own bubble tea for a ridiculous fraction of the price!

Step 7: Tea Is What You Make It

There are so many variations to be had with this recipe!
Add in some food colouring to make your bubbles more fun, or perhaps some flavour extracts.
Cook the pearls in coloured or flavoured water.
Let the pearls sit in coloured or flavoured water! It's so simple but can make a world of difference to your end result.
You can make any tea you like, or just eat the pearls on their own!
Add in any additive. Syrups, cordials, extracts, nectars, purees, powders, anything or nothing it's up to you.
Make as little or as many as you want, as long as that ratio is 3:1 and you have boiling water it is almost impossible to go wrong! Make them any shape you want too, just have a straw big or small enough to slurp them up.

I would also like to add that my container of tapioca flour is called "Arrowroot". These are actually two different things, just make sure to check the ingredients - you want to see the words tapioca or cassava root, anything else and you have the wrong ingredient.

I also learnt on my endeavor through the internets that the black pearls they serve you at stores are a gimmick. I could not find anything that distinguished between the pearls I have just taught you to make and the ones used at bubble tea chains. Sources said they are black because they are cooked in brown sugar, but that only turns them slightly brown. I truly believe it is just food colouring that turns them black and I am sure they only do this for the contrast against the white milk in the tea. Try the recipe and see for yourself that they taste the same!

Q. Hi. I’m wanting to sell uncooked boba pearls in packet. How can I keep its shape? Any suggestion?

 
A. Hi, im student from food technology and we just make an experiment about the uncooked bobba. you just need to put the bobba in freezer after you finish make a bobba. Before you put in a freezer, make sure you coated the bobba with the tapioca starch so the bobba will not stick to each other. We have been frozen the bobba for a two weeks and when we want to boil it, it turned out very well and chewable like original.

Resipi - Teh Booba Sagu/Ubi

Ingredients – Boba Pearls

**please note the measurement of ingredients are in ratio portioning, you can use smaller cup/measurement to yield lesser boba pearls
  • 1 cup of Boiling Water
  • 1 cup of Dark Brown Sugar
  • 2 & 1/2 cup of Tapioca Starch

Procedure – Raw Boba Pearls

  1. With a clean pot, add boiling water and dark brown sugar in.
  2. Melt the dark brown sugar by stirring the mixture.
  3. Once it is melted, add tapioca starch and mix it until there is no more lump.
  4. Then over a low heat, cook the mixture. Continuously stir it with a spatula to prevent bottom from stick and burn.
  5. Cook until the mixture all stick together forming sort of like a dough.
  6. Transfer the dough onto a clean working surface and scrap all the sticky bits on the pot and spatula.
  7. The dough would be quite warm but still workable with your hands. Knead the dough as you fold it those tiny bits.
  8. Knead until the dough is smooth.
  9. Thoroughly roll the into an elongated shape.
  10. Cut it into a few pieces. Cover them with a damp cloth.
  11. Take a piece of dough and roll it into 1cm diameter.
  12. Then cut it into 1cm in length.
  13. Roll them between your palms into round shape and you have raw boba pearls
  14. Generously sprinkle tapioca starch into a clean container, transfer all the raw boba pearls into the container and coat the boba pearls with tapioca starch.
  15. Repeat step (11) to step (14) until all the dough pieces is done.

Procedure – Cooking the Boba Pearls

  1. Bring a pot of 4 liters water to a boil.
  2. Add raw boba pearls into boiling water and bring it back to a boil then reduce to a simmer.
  3. Simmer for 15 minutes.
  4. After 15 minutes, transfer the cooked boba pearls into an ice water.

Ingredients – Braising the Boba Pearls

  • 4 cups of Boiling Water
  • 1 & 1/2 cups of Dark Brown Sugar

Procedure

  1. In a pot, add boiling water and dark brown sugar. Bring to a boil and stir occasionally to prevent bottom from sticking and burn.
  2. As it is being boiled add all the cooked boba pearls into the sugar mixture.
  3. Once its reached a full boil, reduce to a simmer and simmer for 20 minutes.
  4. Then remove from heat and let it chill for 10 – 20 minutes.
  5. Serve with your preferred drinks.

Di Mana Jin Tinggal?


Ramai beranggapan bahawa jin tinggal di hutan-hutan belantara sehingga disebut orang kalau tempat itu agak terpencil maka dikatakan tempat jin bertendang.

Sememangnya, jin suka tinggal di tempat-tempat yang kotor dan bernajis, seperti bilik air, tandas dan tempat pembuangan sampah tempat-tempat runtuhan dan tinggalan orang, padang-padang pasir, dan tanah perkuburan.
Banyak hadis Nabi SAW yang melarang mendirikan sembahyang di bilik air kerana di sana mengandungi najis yang menjadi tempat syaitan, begitu juga larangan bersembahyang di tanah perkuburan bagi menutup pintu-pintu syirik dan juga disebabkan kubur adalah tempat tinggal syaitan.

Lebih-lebih lagi tempat yang banyak berlakunya perkara syubhat dan kemaksiatan seperti di pasar-pasar, Nabi SAW pernah berpesan kepada seorang sahabat baginda dengan sabdanya:

Maksudnya:
“Kalau boleh janganlah kamu termasuk daripada orang yang awal masuk ke pasar dan jangan jadi orang yang terakhir keluar daripadanya kerana pasar tempat perjuangan syaitan dan di situlah ditegakkan benderanya.”

Kebanyakan yang tinggal di bilik air ialah jin kafir yang merasa seronok dengan bau yang busuk kerana memang jasad mereka itu busuk.

Zaid bin Adham menjelaskan bahawa Rasulullah SAW pernah bersabda:

Maksudnya:
“Sesungguhnya bilik air ini ada mengandungi jin, apabila salah seorang kamu masuk tandas hendaklah ia berkata “Ya Allah aku berlindung kepadamu daripada syaitan jantan dan syaitan betina.”  (Riwayat Tirmizi Dan Nasai’)

Selain itu, jin juga tinggal di kampung-kampung, di gunung-ganang, dan lembah-lembah sebagaimana sabda Rasulullah SAW yang disebut oleh Abusy-Syeikh di dalam kitabnya:

Maksudnya:
“Telah berlaku pertengkaran di antara jin Islam dan jin musyrikin, maka mereka memohon kepadaku untuk menempatkan mereka, secara berasingan. Maka aku letakkan jin Islam di kampung-kampung dan gunung-ganang dan aku tempatkan jin kafir di antara gunung dan laut.”

Jin juga tinggal di rumah orang Islam sebagaimana sabda Rasulullah SAW yang diriwayatkan oleh Yazid bin Jabir, katanya:

Maksudnya:
“Tidak adalah suatu rumah daripada kaum muslimin melainkan di atap rumah mereka ada golongan jin Islam. Apabila mereka meletakkan makanan di waktu siang, golongan jin turun dan makan tengah hari bersama mereka dan apabila manusia meletakkan makan malam mereka pun turun dan makan malam bersama mereka itu.” (Riwayat Ibn Abid-Dunya di dalam bab : Makaidusy-Syaitan)

Tetapi golongan jin tidak dapat masuk ke dalam rumah orang-orang Islam apabila mereka membaca ayat-ayat Al-Quran di dalamnya sebagaimana Sabda Rasulullah SAW:

Maksudnya:
“Apabila seorang lelaki masuk ke rumahnya terus menyebut nama Allah dan begitu juga ketika makan, maka syaitan berkata, maka tidak ada tempat tinggal dan tidak ada makan, dan apabila disebut nama Allah ketika masuk tetapi tidak ketika makan maka syaitan berkata kamu dapat makan tetapi tidak dapat tempat tinggal dan apabila tidak menyebut nama Allah ketika masuk dan ketika makan maka syaitan mengatakan kamu dapat tempat tinggal dan dapat makan.” (Muslim)

Setiap rumah yang dibacakan surah Al-Baqarah maka syaitan tidak akan masuk ke rumah itu selama tiga hari dari tarikh membacanya itu sebagai mana sabda Rasulullah SAW:

Maksudnya:
“Janganlah engkau jadikan rumahmu sebagai kubur sesungguhnya rumah yang dibacakan padanya surah Al-Baqarah tidak akan dimasuki oleh syaitan.” (Riwayat Muslim, Tirmizi Hadis Hassan Sahih)

Sabdanya lagi yang diriwayatkan oleh Sahl bin Saad.

Maksudnya:
“Sesungguhnya bagi tiap sesuatu itu ada kemuncaknya, sesungguhnya kemuncak Al-Quran itu ialah Surah Al-Baqarah, sesungguhnya sesiapa yang membacanya di rumahnya pada waktu malam, syaitan tidak akan masuk selama tiga malam, dan sekiranya dibaca di waktu siang mereka tidak akan masuk selama tiga hari.” (Riwayat Tabarani dan Ibn Hibban)

Maka untuk menghalang mereka masuk ke rumah kita selama-lamanya, hendaklah dibaca surah ini setiap pagi dan malam.

Begitu juga apabila kita hendak memasuki rumah baru hendaklah dimulai dengan surah Al-Baqarah bukan seperti sesetengah orang yang menggunakan amalan-amalan syirik dengan bertepung tawar, dan menabur beras kunyit yang tidak kena mengena dengan cara menghalau syaitan itu. Sewajarnyalah kita kembali kepada ajaran Islam berdasarkan nas-nas Al-Quran dan hadis Nabi kita Muhammad SAW.
 
Untuk mengelakkan jin melihat aurat kita di dalam bilik air ialah dengan membaca bismillah sewaktu kita hendak memasukinya sebagaimana sabda Rasulullah SAW yang diriwayatkan oleh Saidina Ali b.Abi Talib KWJ:

Maksudnya:
“Tirai di antara mata jin dan aurat umatku iaitu apabila salah seorang di antara kamu memasuki bilik air dia membaca Bismillah.” (Riwayat Tirmizi)
Imam Malik RA pernah meriwayatkan di dalam kitabnya Al-Muwatta’ “Pernah diceritakan bahawa Saidina Umar b.Al-Khattab RA ingin pergi ke Iraq, maka Ka’bul Ahbar menasihatkannya, jangan engkau pergi wahai Amirul Mu’minin kerana di sana ada sembilan per sepuluh sihir dan kejahatan dan di sana banyak golongan jin yang fasiq dan padanya ada penyakit-penyakit yang susah sembuh.”

Termasuk juga tempat-tempat yang disukai oleh syaitan ialah tempat di antara cahaya matahari dan tempat teduh. Maksudnya di antara dua kawasan itu, dan dalam hal ini baginda Rasulullah SAW melarang kita duduk di tengah-tengah kawasan itu.
